Arugula and Walnut Salad With Warm Bacon, Cranberry Vinaigrette & Shaved Cheese

2 ½ cups baby arugula leaves, washed and trimmed
6 pieces / halves of candies walnuts
2 tsp. dried cranberries
2 tbsp. warm bacon dressing
1-2 tbsp. shaved Padano Cheese

Warm Bacon Dressing
4 cups bacon, diced
½ cup balsamic vinegar
1 tsp. Dijon
1tbsp. honey
1 cup olive oil
2 shallots
1 clove garlic minced
cracked black pepper


Sauté the bacon until crisp, remove all bacon fat except 2 tbsp.
Add the shallots and garlic. Add the balsamic and reduce by half.
Remove from heat and add the olive oil, Dijon, honey and pepper.
Place greens into a small bowl, top with dry cranberries, nuts and warm dressing.
Garnish with shaved Padano cheese.
Serve immediately.
