Green Egg Christmas Turkey

Yield- 1 10 Lb. Turkey (8-10 portions)


1-     10 lb. whole turkey

3-4 tbsp. extra virgin olive oil

3 tbsp. Chef Corbin BBQ rub

1 beer tin of cider

2 large onions- chopped

1 foil tray (3 inches high)

1 turkey stand or beer can chicken stand

8-10 cups Cider soaked mesquite wood chips



Preheat your green egg to 350-degrees.

Rub the olive oil over the entire turkey with the BBQ rub.

Place the whole turkey onto the turkey/ beer can stand and place it into the foil tray with the chopped onion and tinned cider.

Add two cups of the soaked mesquite chips to the smoker and place the foil tray and turkey onto the preheated grill.

Smoke and cook the turkey in the Green Egg for 45 minutes.

Add more soak wood chips and baste the turkey with cider and turkey drippings- repeat every 45 minutes until the turkey is cooked through.  The turkey will take approximately 2-1/2 hours to cook.


NOTE:  Remove the turkey from the smoker when a thermometer reads 170-degrees F.  After you remove the turkey from the grill- tent it lightly with foil and allow to rest 30-45 minutes; once the turkey has rested, slice and serve!
