Ingredients

1 cup Semi-sweet bitter chocolate
1 cup whipping cream
1 cup icing sugar
3 tbsp. Granulated sugar
1 tsp. Vanilla

Directions

Combine chocolate, half of the whipping cream and icing sugar in a bowl.

Place over a pot of simmering water and stir until the chocolate is melted and all of the ingredients are completely mixed. While the chocolate is melting.

In a separate bowl, mix together the remaining whipping cream with the granulated sugar and vanilla.

Whip until thick and stiff peaks form.Fold whipped cream into the melted chocolate mixture and refrigerate for 1 hour.

To serve, spoon some of the mousse onto a white plate and garnish with fresh berries and chocolate shavings.Note- perfect recipe to freeze and use as an iced parfait
