Description

Ingredients

3 oz butter
1lb mirepoix
2lb shrimp or lobster shells
2 garlic cloves, minced
2 oz tomato paste
4 oz brandy12 oz dry sherry
4 Litre fish veloute
500ml 35% cream
Salt and pepper to taste
Pinch of cayenne pepper

Directions

Sauté mirepoix with shrimp shells in the butter. Add the garlic and tomato paste.

Add the brandy and flambé. Add the sherry, deglaze and reduce by half.

Add the veloute and seasonings. Simmer on low heat for 1 hour.

Strain out solids, add cream and season to taste.
