Description

Ingredients

1 box 14 oz. "Forno Bonomi" Saviordi ladyfingers (or another brand)
14 oz. "Galbani" mascarpone (this brand is highly recommended)
4 eggs separated
6 tablespoons of sugar 2 cups of warm espresso coffee Liqueur (Cointreau, Kahlua or your preference)
Bitter Cocoa Powder

Directions

Separate egg yolks from the whites. Add sugar to egg yolks and beat until mixture is pale in color. Add mascarpone cheese in (room temperature recommended.) Whip until smooth.

In separate bowl beat egg whites until they are stiff. Add egg white mixture into mascarpone mixture. Add liqueur to the coffee mixture.

Dunk cookies lightly one at a time into espresso/liqueur mixture and form a layer to cover bottom of pan. Spread some of the mixture to cover the cookies. Sprinkle or sift some cocoa powder over top the mixture. Continue to do this until tray is full (2 or 3 layers depending on the pan.) Refrigerate at least 8 hours or overnight is even better
