BBQ Pulled Chicken Sliders

Yield- 1 dozen mini sliders

Ingredients

1 tsp. (14ml) extra virgin olive oil
1/2 tsp. (7 ml) unsalted butter
1 small onion- diced small
1 clove garlic, minced
1 whole roast chicken- cooked and shredded (3LBS)
1 cup (250ml) ready-made BBQ sauce
1 ½ tbsp. (20-25ml) Tabasco Sauce
1 tbsp. (14ml) liquid honey
Salt and Pepper to taste
1 green onion- sliced thin
12-mini brioche sesame buns (approx. 3 inches in Diameter)

Method

Preheat the olive oil with the unsalted butter in a medium sauce pan. Add the diced onions and minced garlic and cook until soft and translucent. Add the shredded cooked chicken meat with the BBQ sauce, liquid honey and Tabasco Sauce. Stir gently and cook on low heat until heated through. Remove from heat and season with salt and pepper.
Cut each mini brioche bun in half and toast both sides. Fill each bun with heaping amounts of the pulled chicken mixture and serve while still warm with Tabasco Kettle Chips.

 

Tabasco Kettle Chip Recipe

Ingredients

1 -8oz bag of plain kettle chips
6 shakes of Tabasco sauce
Pinch of onion powder

Method

Combine the potato chips with the Tabasco Sauce and onion powder in a medium sized paper bag. Shake gently to incorporate the seasoning and serve.
