Description

Ingredients

1 large onion- chopped fine
1 large carrot- diced small
5 stalks of celery- diced small
3 cloves garlic- minced
½ small green cabbage- shredded fine
½ lb. bacon- cut into ½ inch pieces
1lb potatoes- peeled and medium dice
2 lbs. cooked beets- shredded (use a cheese grater to shred them)
1-28oz tin diced tinned tomatoes
2 cups- cooked white beans
3 litres of beef stock
2 cups left-over roast beef- chopped into ½ inch pieces
Salt and pepper to taste
1 cup sour cream
¾ cup chopped fresh dill
1 cup chopped green onions
1/4 cup white vinegar

Preheat a large soup pot over medium-high heat. Add the bacon to the pot and cook for 5 minutes or until crisp.

Add the diced onions, garlic, carrots and celery and continue to cook for 5 minutes.

Add the green cabbage, potatoes, tomatoes, beans and beef stock with the grated cooked beets.

Bring the soup to a boil and season lightly with salt and pepper- add the cooked roast beef. Reduce the soup to a low simmer and continue to cook for 1 hour.

Remove the soup from the heat. Add the fresh dill, vinegar, green onions and sour cream- check seasoning and add more salt and pepper if necessary.

Serve while hot and enjoy with warm baked bread.
