|120 grams of butter|
120 grams of chocolate|
2 eggs and 2 egg yolks|
4 Tbsp. icing sugar|
2 tsp. flour|
1 tsp. ground ginger|
1 tsp. ground allspice|
- Over simmering water, heat the butter and chocolate together until the chocolate is almost melted.
Beat together the eggs, yolks and sugar with a wisk until the mixture becomes light and thick.
Beat the still warm chocolate mixture and pour it into the egg mixture.
Quickly beat in the flour until just combined.
Add the ground ginger, allspice and nutmeg.
Butter and lightly flour 4 small ramekin dishes.
Tap out the excess flour then butter and flour again. Divide the batter among the ramekins. Preheat he oven to 450 degrees.
Place the filled ramekins onto a baking tray and bake in the oven for about 6-7 minutes. Remove from the oven and invert the ramekin into a serving plate. Serve immediately.
